Fiesta Menu

This is what I have for the menu so far; bbq chicken, ribs, red rice, potato salad, and chicken kelaguen. This is what I will be doing and if anyone has any suggestions or would like to make something just chime in. Nothing low fat or low carb, or low anything here just some good ol fiesta fare. Shoot now I gotta go eat something I made myself hungry!

Matt, your fiesta post is the most sensible thing I've read on the blog in a very long time. We're talking food baby! Joanna may be able to mail you a box of guamanian lemons for the marinades, kelaguen and finedene. If only we had some tangan-tangan to cook with...

Joanna, go for it. What ever you can add is great. We can pick up any raw fishy stuff locally. Islandjewel needs to chime in too. She told me she would be traveling, but mabey she will see this.

I was just craving lumpia. It's tedious but, I could purchase ones from da store and oil and pan:)I can make pickled cucumbers.I especially can help prep.I know how to make Kudo,stufao,Tinactac,and a great marinade that Alice taught me.I can make any kind of curry.I can bake whatever.A pig would do:)Or goat.Let us know what you all have been craving forever,even if it's diego.

Dave, if tangan-tangan is what you want to bar-b-q with,maybe I could bring some medium-size sticks just for the aroma. I think if I skin it,they'd let it go thru customs. I know I could bring pugua but, it has to be husked.Rules,rules, rules but for our own safety:)

Joanna, Yes they do have coconut int the stores. I like the greener coconut, all we have is old coconut.
While you are at it, Beattlenut, sweet and sour seeds, and pickled papya.

Coconuts... are you kidding me. They don't even know what real coconuts are here.

Really rac?O.k. I'll see what I can do especially the beetlenut,sweet and sour plums and pickled Papaya. It won't be pickled enough if I make it there.So should I bring husked coconuts. Help me Mat and Benita. I just don't know what's available in Vegas.Yet it sounds like you two are going to pack a fantastic "picanic" basket:)Yogi bear!!!

You might be able to smuggle the coconuts in if you break them in half then stuff them in your bra. Just a thought. ;-)

Joanna, your right. the pickled papya would not be verry pickled. I can get husked coconut with the milk here, but they are the old ones, not the green soft meat, sweet milk ones.
RAC, that is more than a thought, we call them dreams.

We have pretty much everything here coconuts for kelaguen,achote for red rice, and we even have sweet and sour seeds. I have a grater for the coconut and we're always making daigo. But the one thing I need is the canned "Yours" lemon powder. So if Jo will bring me some I would be grateful.

Good luck with customs everyone. I fly often and it is not fun these days. The less interesting stuff in the luggage, the better chance you have of getting to your flight on time. You might have a better chance to mail stuff. I use regualar lemons and lime. Most important are the red boonie peppers. RAC you are toooo funny!

Mat,"Yours" lemon powder will be coming.I notice a lot of locals look for that and the chorizo's. I'll just take it out of the can because like Juliet said,it can hold you back.Cans and stuff.On the way back from Utah,I bought a big can of Almond Roca. They stopped us and I eventually learned it was that not toiletries as they claimed:)RAC,you're funny:)

This all sounds great, I'll be available to be a "gofer" cook and run for beer, e.t.c..OK, I'll just bee there 2 drink>>So, 38 years later, whats new???
